Mezcal
The mezcal is one old original spirit of Mexico, elaborated from the distillation of the fermented juice of several
species of agave.
There exist different types of agave, and each one produces a version different kind of mezcal; one of the most known,
although it does not exactly respond to the traditional definition of mezcal, is tequila. The production of the mezcal
itself is regulated by the Mexican Official Norm 070 and the Regulating Council of the Quality of Mezcal (COMERCAM).
The Mezcal is a denomination of origin recognized internationally.
